I found this really delicious and incredibly easy recipe for Huevos Rancheros. It's also pretty inexpensive to boot! My favorite part of the recipe is the garlic salt. It adds a perfect spice to the meal. The fresh cilantro leaves also give it a very fresh taste.

Ingredients
2 Tablespoons of canola oil
8 Large eggs
1 Teaspoon chili powder
1/2 teaspoon garlic salt
3 Warm corn tortillas
1 Cup prepared salsa
1/2 Cup crumbled cheese
2 Teaspoons cilantro leaves.

Preparation
1. Heat oil in large nonstick skillet over medium heat. Break eggs into pan, cover and cook for 4 minutes or until whites are set, but yolks are still runny. Season with chili powder and garlic salt. Remove from heat.

2. Place tortilla on each plate, top with salsa, add egg. Sprinkle with cheese and cilantro leaves.

Prep Time: 10 minutes
Cook Time: 5 minutes

Combine this with some great margaritas and you're set!

These past few (4) months have been busy... stressful... life-changing... for both me and Scottie.

We unpacked our scale the other day. And, um, well it turns out the craziness has caused us both to pack on a few extra pounds. Well, actually all of the Napolis pizza we had delivered to our house while rennovating it was probably the cause for the extra Ilbs.

So we've challenged ourselves. Whoever losses the biggest percent body mass gets to pick where our next trip will be to (within reason). And the loser has to pay for the transportation to get there.

I'm using this blog to publically display how far along I'm going. Hopefully knowing it's on the world wide web will also encourage me to actually keep track and keep moving forward. You'll see a new little ticker on the right hand side of the blog. That's where I'll keep track.

Update on Bridal Show

Well the bridal show that I was panicking so much about went really well! No huge issues, everyone that was supposed to be there showed up, and we had double the attendees the average show in our area does. I am still very tired this week from the show but I'm recovering!

We were also able to actually have some fun, too! One of our Gold Sponsors, Ideal Impressions Photography had a photobooth so we had some fun with it. A big group also went out for some hearty Italian afterwards. It was a good day.
